KIMSA, meaning "three" in Quechua*, pays tribute to the three regions of Peru: The Coast, The Andes, and the Amazon. Each of these regions contributes ingredients and techniques that have shaped one of the most acclaimed cuisines in the world. Over time, Peruvian cuisine has evolved through influences from migrations and cultures such as Chinese, Japanese, and African, blending flavors and traditions into a vibrant and deeply rooted culinary experience.
